Our decaffeinator is located in Mexico, where they use the crystal-clear spring water that flows from Pico de Orizaba—the highest mountain in Mexico. The source water's purity enhances the decaffeination process, ensuring an end product as close to the original as possible. The first step in the process involves steaming the green coffee beans. This softens the beans and prepares them for the decaffeination stage. Following this, the beans are then washed in water saturated with flavonoids. Flavonoids are natural compounds found in plants, and in this case, they help effectively dissolve most of the caffeine content while leaving the other flavour chemicals largely untouched.
After the flavonoid-saturated water has done its job, it goes through an activated charcoal filter. This filter scrubs the water clean, removing the caffeine but preserving the flavour elements. Because this filtered water is rich in flavour compounds, it's reused for the next batch of beans, ensuring a consistent and authentic coffee experience batch after batch.
The end result is a decaffeinated coffee that retains most of its original flavour profile. It has a rich aroma and a taste that is hard to distinguish from its caffeinated counterpart.
