There are three commonly used methods to decaffeinate coffee, but the method we employ is widely considered to be the best in terms of preserving the bean's natural flavour and aroma. Known as the water process, this method ensures you don't have to compromise on taste when opting for a decaffeinated cup.

Our decaffeinator is located in Mexico, where they use the crystal-clear spring water that flows from Pico de Orizaba—the highest mountain in Mexico. The source water's purity enhances the decaffeination process, ensuring an end product as close to the original as possible. This is crucial because the water quality can significantly impact the taste of the coffee.

The first step in the process involves steaming the green coffee beans. This softens the beans and prepares them for the decaffeination stage. Following this, the beans are then washed in water saturated with flavonoids. Flavonoids are natural compounds found in plants, and in this case, they help effectively dissolve most of the caffeine content while leaving the other flavour chemicals largely untouched.

After the flavonoid-saturated water has done its job, it goes through an activated charcoal filter. This filter scrubs the water clean, removing the caffeine but preserving the flavour elements. Because this filtered water is rich in flavour compounds, it's reused for the next batch of beans, ensuring a consistent and authentic coffee experience batch after batch.

The end result is a decaffeinated coffee that retains most of its original flavour profile. It has a rich aroma and a taste that is hard to distinguish from its caffeinated counterpart. Because of the meticulous process we use, even the most discerning coffee drinkers often find it challenging to tell that they're drinking a decaffeinated version.

Our commitment to this gold-standard decaffeination process is part of our more significant commitment to quality and sustainability. By reusing water, we minimize waste, and by sourcing our coffee and water responsibly, we ensure that we're making a positive impact on the communities involved in every step of the process. So the next time you're in the mood for a cup of coffee without the caffeine, you can be sure that you're getting a product that is both delicious and ethically produced.

At Martelli Giovanni, our decaffeinated coffee is thoughtfully packaged in distinctive silver bags, not only to simplify your life but also to help your staff easily differentiate them from our regular coffee bean bags.
